The Santian ST-100 features an integrated sharpening mechanism designed to help maintain the cutting edge of the blade.

Before cutting, the spring-loaded grinder switch can be used to sharpen the knife. As the grinding wheel wears, the re-sharpener arm can be adjusted to maintain suitable contact between the grinding wheel and knife edge.

Keeping the blade correctly sharpened helps achieve cleaner cuts and consistent cutting performance.
